Noma’s Co-Founder Opens Restaurant in Bolivia

Gustu Restaurant, La Paz, BoliviaThere’s been a lot of press about culinary tourism in neighboring Peru. (Just check out the round-up of 2013’s hottest destinations by our sister publication, Travel Agent Magazine). But thus far, little attention has been paid to neighboring Bolivia’s cuisine.

That might soon change, says a recent article in The Guardian, since the recent launch of Gustu restaurant by Claus Meyer, the co-founder of Copenhagen’s Noma, oft cited as the best restaurant in the world. This is Meyer’s second resto in the Bolivian capital city of La Paz.

To quote The Guardian: “Gustu will champion the little-known cuisine of South America's poorest nation, blending Meyer's avant-garde cooking methods with local ingredients including llama steak and giant runner beans.” Indeed, there are endless fruit and vegetable varieties indigenous to Bolivia that are not found anywhere else. The restaurant is part of a larger non-profit project which includes a cooking school for training young chefs from disadvantaged backgrounds.
