Cap Maison: A New Chef in the House

When many think of cliff-side dining, Cap Maison's Cliff at Cap readily comes to mind. Now, the restaurant has a new executive chef. Who you ask? Craig Jones, who, prior to joining the St. Lucia hotel, was executive chef at Royal Rex Resorts, also in St. Lucia, for six years, having achieved AAA Four Diamonds from 2004 to 2006.
At Cliff at Cap, Jones' menu consist of French West Indian cuisine, which will rely heavily on local produce and seafood. In fact, guests are welcome to join Jones every Saturday morning while he shops the local markets. Signature Dish: Try the butter-poached lobster served with mascarpone enriched gnocchi parmesan tuile. We're told Jones has also created a healthy kids menu to boot.
On Sunday afternoons, Jones presents his weekly Lobster Lunch, an array of variations centering on the crustacean theme. Private Dining: Cliff at Cap also features a vaulted walk-in wine cellar, which seats up to 14 for a dinner.
