Since it opened in 2010, the Fullerton Bay Hotel has gained a reputation for glamour on the waterfront in Singapore's Central Business District. There’s the dramatic architecture, the gym that’s open 24/7, the rooftop pool, and the skyline views from balconies in each of the guest rooms. The latest news is the debut of its newest restaurant, The Clifford Pier, named to honor the important Singapore landmark it occupies. Dating from 1933, boat passengers and immigrants landed at the pier, which also served as a marketplace for hawkers to peddle their wares.

The restaurant's interiors were conceived by Andre Fu, the star Hong Kong designer, who respected the original architecture of the building. On the menu you’ll find plenty of hawker-style ”street food” (like rickshaw noodles), but it also pays homage to the destination’s role as a “melting pot of diverse cultures” with reinterpreted dishes from east and west. Signature plates include Soup Kambing; a traditional mutton soup with local spices, Porchetta; a slow-roasted spice-infused crispy suckling pig, and Massaman Lamb Rack slow-roasted with organic barley, pomegranate and herbs.
