During the creation process, the team has travelled extensively around the country’s wine regions speaking to wineries and tasting various wines in order to establish a wine program. Capella’s working relationship with the winemakers allows a controlled development and fermentation for these specially labeled wines, all in hopes that these wines will be seen as among the best in Mexico and globally.

One of the Capella Pedregal Private Reserve wines in the Unique Collection is derived from Hacienda la Lomita in Guadalupe Valley and considered one of the premier vineyards in Mexico. The wine that they have developed for Capella Pedregal is a ruby red color varietal with purple reflections showing a medium concentration. The first impression in the nose gives you some lactic and spicy notes, but then the fruit arise and continues with blueberries and blackberries, then more complex aromas arise with hints of violets, hibiscus, toffee and some creamy elements. To the palate, the texture is velvety and has a finish with a hint of tobacco. It is a blend of Shiraz, Grenache and Tempranillo.

Award winning sommelier Perez has worked at a range of renowned restaurants including stints as Head Sommelier at the Shangri-La, Qaryat Al Bheri in Abu Dhabi and prior to that the Four Seasons at Anahita in Mauritius. He has also spent time as a visiting professor on wine at the Culinary Institute of Mexico and holds a number of accolades including accolades including the “Best Tasting Award” and the first runner-up at the International Best Sommelier Competition in Shanghai, China.
