AmaWaterways Revamps Chef's Table Restaurant With New Tasting Menu

AmaWaterways' reinvented Chef’s Table will feature a tasting menu with three appetizers, a champagne sorbet intermezzo, three main courses and three desserts, serving up a variety of regional specialties and traditional dishes.
 

At the Chef’s Table, which seats 28 guests per evening, a demonstration kitchen is part of the entertainment as passengers can watch the chef prepare a multi-course dinner. 

“In collaboration with our executive chef, Primus Perchtold, we have created a truly distinctive, intimate experience in the Chef’s Table,” said Rudi Schreiner, president and co-owner of AmaWaterways, in a written release. “Our new tasting menu gives travelers the variety and choices we know they are seeking and, we believe, the very best cuisine available on the river.”

Each course is paired with a hand-selected regional wine. One aspect of the new menu that was recently introduced to rave reviews on ships within the line’s European fleet includes tasting main courses of Cod Fillet with Beurre Blanc and Crayfish Cake, served along with Blanquette de veau charolais with saffron and a side dish of Porcini Ravioli with Truffle Mousseline and fresh asparagus.

In addition to the specialty restaurant experience, AmaWaterways features an award-winning main dining room, a selection of tapas in between lunch and dinner, complimentary, unlimited beer, wine and soft drinks with lunch and dinner and sparkling wine with breakfast.
