New Italian Restaurant to Open at Four Seasons Prague

Looks like Prague is getting a high-end taste of Italy: A new restaurant, bar and lounge, dubbed CottoCrudo, will open at Four Seasons Hotel Prague on March 2. CottoCrudo, which means “cooked and raw,” will reportedly serve an Italian menu with a modern twist, and will feature a dedicated crudo bar.

Executive Chef Richard Fuchs focuses on seasonal ingredients for his menu of Italian and Mediterranean dishes, including fresh seafood, homemade pasta and artisan products from the Piedmont and Tuscany regions of Italy. He recommends several dishes in particular: The saffron arancini di riso and tomato basil salsa or Piedmont beef tartare from starters; fresh tagliatelle with wild boar and pecorino di Pienza or Mediterranean seafood soup with fregola sarda as Italian primi and grilled yellow fin tuna with eggplant caviar and caponata or costoletta alla milanese as main dishes. For dessert, try the Amarena cherries chocolate cake or cannoli.

Oenophiles can sample from a wine list of more than 300 labels, of which 26 wines will be available by mezzo (Italian carafe). We hear the cocktail list will feature Italian and Czech twists on classic recipes.
