Ethan Stowell's newest restaurant, Goldfinch Tavern at Four Seasons Hotel Seattle, is now open.
Led by Chef Joe Ritchie, the new eatery offers Pacific Northwest cuisine with a focus on regional seafood -- think a shellfish and raw bar, hamachi crudo with taggiasca olives, horseradish, red onion and chervil, and garlic crusted Alaskan halibut. Other signature dishes include the Goldfinch Tavern burger; beet and Dungeness crab salad; king salmon tartare and wagyu eye of ribeye with watercress and porcini mushrooms. Guests can either opt for several plates shared family-style or a coursed meal.
The restaurant's cocktail and wine list likewise focuses on locally sourced ingredients. For VIPs and special events, there are twoprivate dining rooms with space for 16 people in each.
