London Hotel Gets New Executive Chef

Gourmands looking to sample nouveau British cuisine in London have a new reason to visit The Stafford London by Kempinski: The hotel has appointed UK native Brendan Fyldes as Executive Chef. Fyldes will oversee all culinary aspects of the hotel including the launch of a new restaurant concept in summer 2011.

Lancashire-born Brendan Fyldes began his formal culinary training at Accrington and Rossendale College before joining the kitchens of some of the UK’s top chefs. He studied under Nigel Haworth of Northcote Manor and most recently served as Head Chef of Richard Corrigan’s Bentley’s in London. In addition, he is credited with maintaining a Michelin Star during his tenure at Paul Heathcotes' The Longridge Restaurant and while at Le Escargot in London’s Soho neighborhood.

In addition to the new restaurant, Chef Fyldes will be designing menus for the hotel’s lounge, in-room dining, and banquet operations in the coming months. Those eager to sample his cuisine immediately can dine at the hotel’s American Bar (pictured above).
