Update: Hotel Castello di Casole Opens in Tuscany in July

We’ve been keeping tabs on the buzzed-about opening of a castle-hotel in the heart of Tuscany. The latest word? The Hotel Castello Di Casole, A Timbers Hotel & Residences, has pushed back its opening date to July 1, 2012. Dating from the 10th century, the castle is situated on a 4,200-acre estate in the rolling hills not far from Florence, Siena, and San Gimignano.

When it debuts, it will have just 41 suites, of which 14 will have expansive private gardens and terraces. There will be two restaurants helmed by accomplished chef Daniele Sera: a gourmet pizzeria (also serving up gelato!) and the Ristorante Tosca, where local Tuscan dishes will steal the show. The hotel’s Essere Spa promises to be a calm and atmospheric haven—occupying the former wine cellar.

The hotel is currently offering a “Grand Opening Special” with a fourth night free when booked by June 30, 2012.
