Marcus Samuelsson (of Red Rooster Harlem fame) is taking his culinary skills south to the Fairmont Hamilton Princess. We hear he will open a pop-up restaurant, Samuelsson at HP, which will run from June 3 to August 3.
The pop-up will preview his new signature restaurant, which is set to open at the hotel in May 2015. Chef Samuelsson has crafted a menu that celebrates Bermudian culture and history, and will be executed by chef de cuisine Leo Marino and chef de cuisine Justin Levine.
The menu will highlight fresh seafood and local flavors (think Rockfish Crudo with pickled cherry tomato, radishes and jalapeno oil; Fish Chowder Croquettes with rum aioli; and Grilled Head on Shrimp with ginger-scallion sauce, sweet soy and cilantro).
To drink? Kick back with a Rum Rum Punch with white rum, dark rum, coconut water, pineapple juice, lime and nutmeg.
