One&Only Palmilla in Los Cabos is set to reopen April 20 with a host of new property enhancements.
The property will have a new steakhouse, SEARED by Jean-Georges Vongerichten, completely refurbished guest rooms and suites, new adult outdoor lounging areas and a new One&Only Spa and Fitness Center.
Michelin-starred chef Jean-Georges Vongerichten will lead the new steakhouse, SEARED, showcasing a selection of steaks displayed in a glass-walled curing room, as well as chops and fresh Pacific seafood. The décor at the steakhouse by Jeffrey Beers International focuses on tawny marble, amber chandeliers, and Aztec geometric marble floors. Guests may also dine al fresco on the restaurant's new ocean-facing terrace.
Adjacent to SEARED, Suviche restaurant has a whole new look with a back-lit alabaster bar, and offers floor-to-ceiling views of the Sea of Cortez. Jean-Georges selected Chef Yoshiaki Akaike from Japan to lead this restaurant, which has a sushi bar that allows 12 guests to watch the craft of the expert chefs.
The One&Only Lounge, adjacent to Suviche, will offer a wide array of cocktails, including an extensive selection of tequila and mezcal. Floor-to-ceiling windows offer more great views, and the space will host nightly live entertainment.
Agua by Larbi has been newly redesigned with an earth-to-sea tone design scheme by David Mexico. Chef Larbi Dahrouch and his team will offer farm-to-table dining throughout the day, pairing Mexican cuisine with Mediterranean influences. The menu will change seasonally, with some menu items changing daily, depending on the fresh catch and produce available from the organic garden. Interactive dining will be showcased here, including hand-made tortillas, moles and signature guacamole and ceviche made tableside.
Dahrouch is a protégé of the late 3-Michelin-star-chef Jean-Louis Palladin. The open kitchen allows guests to observe his team's techniques, while the restaurant's wine cellar contains a large selection of wines from Mexico and around the world. Other beverage options include a dedicated tequila and mezcal trolley, which introduces guests to the distinctive Mexican spirits, from the blanco, reposado and anejo varieties of tequila to the lesser-known mezcal. The restaurant's al fresco dining space leads down to a series of pods with tile-topped oval tables surrounded by stone and cushioned banquettes that perch on the cliff's edge, affording diners an uninterrupted view of the Sea of Cortez. One of these, Larbi's Table, seats 15, and could be a good fit for celebrations.
The resort's central terrace leads guests to the casual outdoor Breeze Café, which overlooks one of the resort's two free-form pools, framed by the vista of the Pacific Ocean. Breeze offers guests a variety of options for breakfast, a light lunch of salads and Mexican delicacies and all-day snacks showcasing fresh and organic produce.
The renovated One&Only Spa and Fitness Center offers indoor and outdoor treatment spaces. Signature treatments take place within a series of 13 private treatment villas, each set within its own secluded landscaped courtyard, many complete with plunge pool, rain showers and swinging day beds. A tranquil lunch or fresh juice in the spa's Yoga Garden is also available.
The new OBO Salon by Jonathan & George is a beauty salon concept created in partnership with Beverly Hills celebrity stylists Jonathan Antin and Amanda George. The salon aims to offer "unplug without being undone" hair and beauty treatments, as well as a series of styles designed to reflect the personality of each of the world's One&Only resorts. The salon will also serve weddings and celebrations hosted at the resort.
Barber&Blade is being introduced as One&Only Palmilla's new men's salon. A dedicated team of grooming experts will offer male guests the chance to unwind and indulge in a series of shaving, grooming and barber shop treatments, as well as pampering for the face and scalp.
Guests of the One&Only Spa can also choose from a wide variety of treatments for the feet, hands and nails at the Pedi:Mani:Cure Studio, designed by French podiatrist Bastien Gonzalez, including a series of signature "Duo" treatments that feature two therapists in synchronized motion.
The Fitness Center is equipped with an integrated collection of Technogym cardio, strength and functional equipment. A variety of group and individual classes are on offer for all fitness levels, ranging from yoga and transformational breathing to nutrition and personal training, while outdoor activities such as Sunrise Yoga and Beach Boot Camp allow guests to enjoy the sunshine. The entire workout space has been reoriented to enable those using the equipment to enjoy the views of the resort's gardens and ocean beyond.
Each of One&Only Palmilla's 173 oceanfront guest rooms and suites have been enhanced, with new furnishings, fabrics and color schemes, plus a complete makeover of the rooms in the classic Tres Palmas wing. Every guest is served by a butler. The resort's Villa Cortez - a four-bedroom beachside residence, complete with private pool, beach access, gardens, entertainment areas, a 12-seat private screening room, study and staff quarters - has also been completely restyled.
