The St. Regis Punta Mita Resort, located along the coast of the Riviera Nayarit in Mexico, has named José Meza the new executive chef of its signature restaurant, Carolina.
The restaurant serves traditional Mexican cuisine with a contemporary twist. Some of the chef ‘s signature dishes include Green Pozole Ceviche with the catch of the day, Quail Taco with Foie Gras, Hoja Santa and Chili Adobo, and Papaya with Yogurt Foam, Lemon Sorbet, and Cilantro.
Chef Meza is also overseeing the bar team at Carolina, and has created a menu that includes premium spirits, fresh fruits and herbs, and a variety of both old and new world wines.
Chef Meza earned his degree in gastronomy at CESSA, San Ángel, and has trained under several Michelin-starred chefs including Martin Berasategui, Bart de Pooyer, and Rene Redzepi of Noma in Copenhagen. Most recently, he led Chef Enrique Olvera’s latest project in San Miguel de Allende, opening Moxi at the Hotel Matilda.
