Fans of Spring restaurant—the always-packed eatery smack dab in the first arrondissement of Paris—will be thrilled to learn that American chef Daniel Rose has opened a new restaurant. La Bourse et La Vie debuted this week in a restored historic space near La Bourse (the former stock exchange) in the 2nd arrondissement. The focus is on classic French food like roast chicken and pot au feu.
As quoted by The New York Times T Magazine, Rose explains, “The reality is, these are the traditional recipes that many people travel to Paris for but which have become harder to find — or at least, hard to find executed with any care.” Breakfast lovers will be pleased to know that the restaurant will open its doors in the morning for pastry, coffee cakes, and coffee from specialty roaster L’Arbre à Café.
