Four Seasons Istanbul Announces New Menu

Got foodies headed for Turkey? Aqua restaurant at the Four Seasons Hotel Istanbul at the Bosphorus is debuting its new menu with dishes of Italian and Mediterranean cuisine.

In his first menu, Chef Luca de Astis focuses on healthy and light summer meals using seasonal and local vegetables. (With many chilled options on the menu, we say Aqua’s summer dishes are just what’s needed for the warmer weather.)

Appetizers, for example, will consist mainly of salads and seafood (think Tuscan panzanella salad, cold potato soup, cucumber ice cream and tuna tartar served with seasonal vegetables). An Italian classic, caprese salad, is served with Chef Luca’s bright style.

Main courses include plenty of classic Italian dishes, with fresh homemade gnocchi, spaghetti and tortelli. Pappardelle with zucchini flowers and quail ragu is another Chef Luca specialty. For seafood lovers, the menu incldues sea bass, grouper, dentex, black cod and lobster.

And dedicated carnivores can sink their teeth into spring lamb shoulder or rack of beef tenderloin served with fresh seasonal mushrooms and potato cream. Orange-scented beef sirloin served with red bell pepper marmalade and semi confit peaches is another highlight from the summer menu.
