New Menu Debuts at Fairmont Chicago's Aria Restaurant

Happy news for foodies in Chicago: Diners at aria restaurant and bar inside the Fairmont Chicago, Millennium Park can try a new menu from Chef de Cuisine Beverly Kim Clark. We hear the menu is an "eclectic" mix of dishes like the Pulled Denver Lamb Rib, Pork Belly with Kimchi and Quail Egg and Scallops served with an interactive element. Reportedly, all of these were inspired by technique and seasonal variation.
 
Even better: The dishes were designed with special diets in mind. Many items can be adapted to meet the allergy-free or gluten-friendly needs of diners. Dishes can also be made meatless for vegetarian diners. Some of the options include: the Lobster Singapore. Duck Vindaloo. Nice touch: Chef Beverly or Sous Chef Tommy will personally greet each guest to fully understand their dietary restrictions.
 
Clark created this menu featuring as much locally grown items as possible. Every Wednesday she shops at Green City Market to select the items for her weekly “authentically local” special. From the meat to the vegetables, everything about the entrée is home grown.
 
The new menu is expected to change seasonally, and Clark is reportedly already eyeing vegetables as her next inspiration.
