It’s a big anniversary year for Raffles Singapore, birthplace of the classic cocktail, the Singapore Sling, and to celebrate, the hotel’s Long Bar is serving up something special. Bartender Randolf Velasco concocted a new Champagne sling called the “1887”—named for the hotel’s opening year. Made with the hotel’s limited-edition Billecart-Salmon Brut Réserve Champagne, the “1887” also contains Gordons Gin, Cointreau and a hint of orange, lemon and lime.
