Michelin-Starred Chef Christian Le Squer to Oversee Cuisine at Four Seasons Paris Hotel

Big news for foodies in Paris: Three-star Chef Christian Le Squer, who left the restaurant Ledoyen last June, is bringing French haute cuisine to the kitchens of the Four Seasons Hotel George V starting October 28.

This appointment follows the departure of Eric Briffard, executive chef since 2008, who new General Manager José Silva praised as maintaining the hotel's restaurant Le Cinq as "among the most elegant and refined tables of the capital." 

Christian Le Squer has held three Michelin stars for 12 years, and is looking to bring some modern touches to classic French fare--think "lightness" rather than "opulence." At the George V, Le Squer will create signature dishes that are "traditional with a modern outlook in keeping with the times: aesthetic, elegant, colorful." Good news for traditionalists: Le Squer also intends to offer "a high-end gastronomical experience, with a strong sense of well-being."
