Chef Mauro Colagreco Returns to Four Seasons Resort Palm Beach

Four Seasons Resort Palm Beach has announced that Chef Mauro Colagreco’s return to Florie’s, his only restaurant in the U.S. The chef will host a series of experiences that celebrate his “cuisine without borders,” from May 18 to 20, 2022. The experience will begin with two evenings at Florie’s, followed by an intimate garden-to-table soirée.

“My food is from my heart, and I love to share it with my guests,” says Chef Colagreco. “Returning to my home away from home at Four Seasons Resort Palm Beach fills me with much excitement as we prepare to share these enriching experiences that will celebrate the gifts of both nature and community.”

Guests and locals alike will be taken on a globe-trotting dining experience with Chef Colagreco behind Florie’s grand open kitchen on May 18 and May 19. Both evenings will feature a one-time-only four-course prix fixe menu featuring dishes that pay homage to the restaurant’s coastal environment while infusing the chef’s Mediterranean spirit through a spectacle of live fire cooking techniques including a stone hearth oven, yakitori grill, and “à la broche.” The specially curated dinner will be paired with wines.

On May 20, guests will be invited to discover sustainable dining at local partner and community staple Swank Farm. Following a champagne toast in Florie’s lounge, guests will depart for a garden-to-table dinner where they will interact with Chef Colagreco while learning the secrets of each seasonal product in the Victorian-style farmhouse. Later, guests will move to the pole-barn where a three-course dinner awaits with live music entertainment and garden-inspired libations.

“Gardening and using the best and freshest produce possible have always been primary inspirations in my cooking style. Our menus at Florie’s shine a light on the fresh ingredients available to us in Palm Beach and this dinner will be the epitome of just that,” says Chef Colagreco.
