Inside the New Serenity at Coconut Bay in St. Lucia

Luxury Travel Advisor recently returned from an on-site visit to the new, swanky Serenity at Coconut Bay Resort in St. Lucia and discovered a playground for affluent Millennials or any generation looking for a true, luxury boutique that offers top-notch cuisine, rooms with gorgeous plunge pools and, of course, plenty of seclusion.

Read on to see why we think this chic resort will soon become one of the island's most sought-after all-inclusive resorts.

Serenity at Coconut Bay opened last summer as a luxury boutique extension of the existing, four-star family resort, Coconut Bay Beach Resort & Spa. The resort is located just minutes from Hewanorra International Airport on the island's southeast coast.

The best rooms here are the Grand Plunge Pool Butler Suites. All eight of these suites come with large plunge pools that get an abundance of light, televisions at the end of the beds that emerge from the furniture, an outdoor gazebo, an outdoor shower and a full outdoor bar. Hint: The hotel staff can arrange for a private reception with light snacks and drinks at a guest's outdoor bar area for no additional cost. 

We also recommend the category just below it, the Premium Plunge Pool Butler Suites. The premium suites offer many of the same amenities, but with slightly less space. For example, the plunge pool in the premium rooms are slightly smaller and the premium rooms do not come with an outdoor gazebo. Good to Know: Luxury Travel Advisor was recently told by CEO Mark Adams that the resort plans to add eight more Grand Plunge Pool Butler Suites by next year.

All suites have plunge pools, custom-made mahogany king beds, soaking tubs and separate rain showers in en-suite bathrooms. In addition to butler services, amenities include in-suite gourmet dining and 24-hour room service, fully-stocked and personalized wet bars, private in-suite check-in and check-out, Bose entertainment centers, Molton Brown toiletries and complimentary Wi-Fi. 

Unlimited reservation-free dining, wine and premium spirits are part of the Serenity all-inclusive experience as well as butler and wait service at the Serenity Pool, dining at the Greathouse Restaurant and full access to Coconut Bay Beach Resort & Spa.

As far as dining goes, butlers make all the arrangements, including a culinary consultation with the Greathouse chef on arrival if guests prefer. In-suite dining arranged and served by the guest’s butler is available for all meals and there is 24-hour room service along with dining at the Pool Bar and the Greathouse Restaurant. Tip: Guests eating at the Pool Bar must try the dry-rubbed, smoked chicken wings and wash it down with a cold Piton beer.

The Greathouse offers guests a menu of Caribbean-inspired cuisine. Tip: The 10-seat Chef’s Table at the Greathouse Restaurant celebrates the island’s creole cuisine and is prepared by celebrated local chef, "Aunty Debbie." Served in a private dining room, this meal highlights the bounty of the island along with some Thanksgiving favorites, including the best dish of the course, the homemade sweet potato pie. 

Although each of the 36 butler suites has its own plunge pool, Serenity’s main pool is a 3,000-square-foot pool with a 1,000 square foot lap pool at its center. The two-tier design offers 24 in-water loungers framing the lap pool while private Pool Cabanas and aqua circle beds are great relaxation spots. In the distance, guests can see St. Lucia’s Maria Islands Nature Reserve.

There are no scheduled activities in the pool, other than lounging, sun bathing and taking advantage of butler service. Guests are served by attendants offering craft cocktails and hors d'oeuvres, chilled towels, cooling herbal mists and premium cocktails.

Guests can choose to indulge in good company—and five HD TVs—in the relaxed casual atmosphere of the Pool Bar. When the sun sets, the pool is illuminated. Lit fountains create a dramatic backdrop for enjoying cocktails at the nearby fire pits or the Greathouse Restaurant verandah.
