New Culinary Partnership From Thompson Seattle and Huxley Wallace Collective

Thompson Hotels has announced a culinary partnership between its property, Thompson Seattle, which is scheduled to open this summer and Huxley Wallace Collective restaurant group.

Executive chef Josh Henderson is set to oversee the culinary direction of Thompson Seattle, including Scout, the property’s signature restaurant, as well as The Nest, a scenic rooftop bar and lounge. Henderson and his team will also design an interactive in-room dining experience and a food and beverage program tailored for groups and weddings.

Scout at Thompson Seattle will “embody the backbone, beauty and spirit of the area with a whimsical, yet smart design." The restaurant will be offer an oversized chef's table, which will serve multi-course, highly local food and will have a modern, glass-encased private dining room, The Cabin, which will comfortably seat groups up to 20 affording views of Pike’s Peak.

The Nest will offer views of Puget Sound as well as the Olympic Mountain Range, and serve small shareable plates and cocktails designed to foster social interaction in a communal setting. Both Scout and The Nest will aim to create a more intimate connection between guests and the kitchen.
