Grand Velas Los Cabos has announced that two-star Michelin chef Sidney Schutte will head the new property’s signature restaurant, Cocina de Autor.
Schutte has world-wide experience thanks to his passion for traveling, which has earned him spots working in a variety of kitchens throughout Europe and Asia. Previously, Schutte has worked in kitchens run by Dutch top chef Richard Ekkebus at Amber (a two-star Michelin restaurant in Hong Kong), Roger Souvereysn of the two-Michelin-starred De Scholteshof in Belgium and Jonnie Boer, owner of De Librije in Zwolle. Schutte, along with Boer, helped De Librije earn its third Michelin star.
Schutte has also been acknowledged as SVH Meesterkok, the highest recognition that a chef can achieve in The Netherlands.
Grand Velas Los Cabos has also announced that Vincent Colauto will be the restaurant’s chef de cuisine. Colauto, known as a rising-star in The Netherlands, has worked with Schutte previously at De Liberjie. Most recently, he acted as Head Chef at Fletcher Hotel-Restaurant Duinzicht in the Netherlands. He will oversee Concina de Autor’s kitchen staff.
Velas Resorts’ Cocina de Autor originally launched at the Grand Velas Riviera Maya location, where it’s overseen by Mikel Alonso and Bruno Oteiza.
