The Knickerbocker to Transform Rooftop Bar Into Backyard “PicKNICK”

The Knickerbocker Hotel is celebrating Independence Day and the start of summer with the launch of PicKNICK on St. Cloud. On July 4, the luxury hotel will transform the St. Cloud Social rooftop bar and lounge into a chic, grown-up playground with a selection of artisanal picnic baskets, curated by renowned chef Charlie Palmer.

Chef Palmer and executive chef Christopher Engel have developed three different picnic baskets for guests to enjoy this summer: The American, The French, and The Mediterranean.

The dishes in The American basket include petite ham and Swiss cheese sandwiches with dijon, deviled eggs, “Ants on a Log” served two ways, and fresh cherries. The French basket includes iconic bites like Solex Sturgeon caviar, a Rougie foie gras pate, Champagne grapes, and fresh Camembert cheese with Acacia honey. And The Mediterranean includes house-made pita, marinated feta, salami, Taggiasca olives, taramasalata, Marcona almonds, and quicos de chocolate (a chocolate-covered corn). The picnic baskets serve two to four people, are served tableside, and are available throughout the entire rooftop during operating hours on a first come, first serve basis. Additionally, half-bottles of Ruinart Champagne are available for purchase.

 

The Wrong Way Rosé

The Knickerbocker has also partnered with Lejay Crème de Cassis to create three fanciful summer cocktails for PicKNICK at St. Cloud Social. Together, they created The Lejay Spritz, with sparkling wine topped with Lejay, seltzer, and lemon, served over ice. St. Cloud Social is also launching two punch cocktails intended for sharing; The French Twist, with spiced rum and lime, and the hotel’s signature summer drink, Wrong Way Rosé, which includes Lejay, drunken berries, fresh citrus, and a bottle of rosé tipped atop.

The hotel is celebrating “Summer Fridays” with one complimentary Lejay Spritz cocktail for guests who arrive at St. Cloud Social before 2:00 p.m.

In addition to the picnic baskets, guests can enjoy small bites from the summer rooftop menu, with highlights that include Maine Lobster Rolls and Piña Colada and Margarita Popsicles, and cocktails such as the Brazilian Orchard with Avua Silver Cachaca, green apple and cucumber.

St. Cloud Social opens at 4:00 p.m. daily and at noon on Fridays through Labor Day.
