Mauro Colagreco, of the three-Michelin-starred Mirazur in France’s Menton, will unveil new culinary concepts in partnership with Raffles London at The OWO, which is set to open its doors next week. Colagreco will launch three dining experiences: Mauro Colagreco at Raffles London at The OWO, Mauro’s Table and Saison. Driven by a commitment to respecting biodiversity and the environment, all three of Colagreco’s dining experiences will showcase the U.K.’s fresh produce sourced from local farms, fields and shores.
Mauro Colagreco at Raffles London at The OWO, his signature restaurant, offers an approach to sustainable gastronomy. It is a culinary experience that traces the paths of the U.K.’s territory through menus that reveal the richness and biodiversity of vegetables and fruits produced.
Mauro’s Table is an intimate dining space situated in one of the building’s rounded pavilions. Centered around a dining table and backed by a show kitchen it will offer private dining for up to 20 guests. Mauro’s Table will offer a tasting that will bring diners on a walkthrough of different gardens. The kitchen will be helmed by Chef Leonel Aguirre, who has worked closely with Colagreco at Mirazur for two years and who shares Mauro’s vision for biodynamic, sustainable ingredients.
Saison will have a contemporary spin on a traditional hotel restaurant. Serving seasonal Mediterranean cuisine throughout the day including breakfast, brunch, lunch, afternoon tea and dinner, this space occupies a former historic library of the Old War Office. True to its name, Saison will reflect Colagreco’s philosophy and commitment to seasonal cuisine. Chef David Lepage, who will be managing the kitchen at Saison, brings a wealth of culinary experience.
Mauro’s restaurants at Raffles London will form part of the culinary destination at The OWO, which will totals nine new restaurants and bars.
